Eat the Rainbow

What’s better than a huge bowl full of your favorite things?!? Delicious, satisfying, and completely nutritious!! This fresh, colorful salad was one of the most filling, yet amazingly delicious salads I have ever made! Honestly, when people tell me they hate salad…I think they are making the wrong salads because how can a salad be gross?!? Throw in all your favorite veggies, protein, healthy fats, and some whole grains and you got a bowl full of color and flavor!

Step 1: Choose your greens! I used a mix of butter lettuce, iceberg lettuce, and baby spinach!

Step 2: Top those greens with any veggies, protein, and healthy fats that you like!

(I added cucumbers, tomatoes, carrots, yellow bell pepper, heart of palm, black beans, garbanzo beans, baked sweet potatoes, sugar snap peas, avocado, baked tempeh, sunflower seeds, almonds, & cilantro )

Step 3: Top with dressing of choice & ENJOY IT!

Tip: Chop up all of your favorite toppings early in the week, and store in the fridge so you can easily and quickly throw together a salad any day, any time!
