COOKIES FOR BREAKFAST?!

That’s what I’m talking about. Come on, admit it, we all love cookies…especially straight out of the oven. Who can resist? You don’t need to with these blueberry, almond, coconut oat cookies!
This recipe makes for a quick snack made with fresh fruit, fiber rich oats, creamy cashew butter, and shredded coconut.
These hearty cookies are gluten free, dairy free, grain free and bursting with flavor!
- 1/4 cup and 2 tbsp coconut oil, melted
- 1/2 cup creamy cashew butter
- 1/2 cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup almond flour, blanched
- 1/2 cup oats
- 1 tsp baking soda
- 3/4 cup fresh blueberries
- handful of almonds, chopped
- 1/3 cup shredded coconut
Mix all wet ingredients. Add in dry ingredients. Bake on 350 F for 10-12 mins. Enjoy.
